fresh eggs

  • ¼ lb. sharp cheddar cheese
  • 4 eggs
  • 6 Tbsp milk or light cream
  • 1 generous tsp. dry mustard
  • Dash cayenne pepper
  • ½ tsp salt
  • 2 Tbsp. butter
  1. Preheat oven to 350 F.
  2. Shred cheese, sprinkle over the bottom of a 9”pie plate.
  3. Crack eggs over cheese, being careful not to break yolks.
  4. Combine milk, mustard, cayenne, and salt; pour over eggs. Dot with butter.
  5. Bake for 15-30 minutes, depending on how you like your eggs done.

Serves 4 (modest portions) or 2 (large portions)
