Carrot Cake

  • ½ cup softened butter (or oil)
  • 2 cups brown sugar
  • 4 beaten eggs
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 Tbsp cinnamon
  • 1 tsp ginger
  • 1 tspvanilla extract
  • 1 cup chopped walnuts
  • 3 cups grated carrots
  1. Preheat oven to 325°F. Grease and flour three 8” pans or two 9” inch pans.
  2. Beat sugar into butter. Beat in rest of ingredients except carrots and nuts. Once mixed, fold in carrots and nuts.
  3. Pour into pans; bake at 325°for 30 minutes. Let cool before frosting.

Frosting (this makes a lot!)

  • 6 oz.cream cheese
  • 4 oz.butter
  • 2 tsp.vanilla
  • 1 Tbsp.lemon juice
  • 1 lb. powdered sugar
  • Pinch of salt
  1. Mix all ingredients until smooth.
